Ingredients :
- 6 fresh figs; plus 2 for garnishing
- 375 ml double cream
- 1 tbsp vanilla essence
- 2 tbsp icing sugar, sifted
- 100 gms walnuts, chopped roughly
- White chocolate, grated
Preparation :
- Scoop out the flesh of the figs, and crumble with a fork
- Whip cream, vanilla essence and sugar until it thickens
- Add the pulped figs and walnuts to the cream and fold
- Add dollops of the fig mousse into serving bowls
- Garnish with a slice of fig each and grated white chocolate
